Mocha, Chocolate Chip Banana Muffins

Have you ever had a muffin and thought that it’s the best thing you’ve ever tasted?  Well, these muffins are those.  They are packed with serious yumminess and will leave you wanting for another.

Just like banana bread, these muffins are the savior of for-gone bananas.  Or perhaps this is what bananas are truly meant to be?  I’ll leave you to decide that conundrum.

Even though this recipe is awesome on its own, there are still ways to build upon it if you so desire.  Want some nuts? Through in some chopped walnuts or pecans.  Or substitute the chocolate chips for some dried currants or other berry and you’ll have yourself a breakfast muffin.  The possibilities are boundless.

What you need:

  • 2 large, ripe bananas
  • 2 eggs.
  • 1 cup butter (room temp)
  • 1 cup sugar
  • 1 tbsp instant espresso powder
  • 1 tbsp water
  • 1 tsp vanilla
  • 2 1/4 cup flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup chocolate chips
  • nuts (optional)

What you need to do:

Preheat oven to 375 degrees Fahrenheit and pre-line muffin pan with paper cups.

Mash bananas in a bowl and set aside.

In a large bowl, cream butter together.  Add eggs, vanilla, espresso (with water) and mix until together.

Fold in flour, salt, baking powder and baking soda.

Mix in bananas and chocolate chips.

Scoop even amount of mixture into each cup and bake for 20-25 minutes or until an inserted toothpick comes out clean.
