This is my take on the SumB*tch cookies from the How I Met Your Mother series. Taking the classic elements of Caramel, Peanut butter and Chocolate, mixing them together and reveling at the results.
What I love about these, is that the “cookie” part of this creation is pretty much a brownie. A fudgy and rich, chocolaty goodness with candy stuffed inside of it. Sound good to you? I thought so.
If you don’t have Almond Flour you can make your own by grounding roasted almonds in a food processor. Or, if almond flour is too much hassle for your busy life (we’ve all been there, don’t worry), you can just use an additional 1/4 cup of regular All purpose flour instead.
The inclusions are also adaptable for your tastes. Add toasted walnuts, or chocolate chips. As was mentioned earlier, the base is essentially a brownie in cookie form. So whatever inclusions you love with your brownie recipe are usable here.
What you need:
- 1/4 cup butter, melted
- 1 egg
- 1 tsp Vanilla
- 1/4 cup All-purpose flour
- 1/2 cup Almond flour
- 1/2 cup Sugar
- 3 tbsp Cocoa powder
- pinch salt
- 1/3 cup Reese’s M&Ms or similar peanut butter candy
- 1/3 cup Mini Rolos or similar caramel candy
What you need to do:
In medium bowl, sift all dry ingredients together.
Pour in butter, vanilla and egg and mix until combined.
Stir in Candy, place bowl in fridge for 20-30 to firm up slightly (optional)
Bake at 375 Fahrenheit for 14 minutes.
