Hi everyone! I am going to share with you one of my favourite appetizer dishes. It’s easy, healthy and most importantly – Delicious!
Zucchini Lasagna Bites!
What you will need:
- 1 package of wonton wrappers or phyllo pastry
- 2 medium zucchini, sliced
- Tomato sauce
- Shredded mozzarella, or favourite lasagna cheeses*
- Basil, black pepper, oregano (optional)
- Pam, or olive oil
- Muffin pan
What you need to do
Pre-heat oven to 375 Fahrenheit and prepare your zucchini.
Spray oil in bottom of muffin pan and place two wonton wrappers in bottom.
Place a spoon full of tomato sauce than, cheese and zucchini. Repeat for a second layer. On Final layer sprinkle desired spices on top.
Brush edges with a little bit of oil and bake for roughly 20 min**. Bake until they are golden brown. Edges may brown faster than inside, so make sure that they are heated all the way through.

*I like to use a blend of mozzarella, provolone, and parmesan. You can usually buy a bag of it pre-shredded at any grocery store.
**Oven temperature and times may very depending on your particular oven.
